Sunday Brunch





Buckwheat Pancakes with Baked Apple Topping

Pancakes: Organic Buckwheat Pancake Mix with a dash of cinnamon and a teaspooon of vanilla.

Baked Apple Topping (Serves Two):

Cook on low heat: One large apple, chopped into thin squares. Add half a cup of apple juice, two teaspoons cinnamon, dash of nutmeg, three tablespoons of brown sugar (can sub with granulated Splenda), and one teaspoon butter or margarine. Cook for about twenty minutes with lid on, stir occasionally. If it is not thick enough for you, add sugar and cook a bit longer.

Optional: Add golden raisins or walnuts.

Optional: Add light maple syrup about 15 minutes into cooking, add gradually to taste.
